Year One
Culinary Arts I provides an introduction to the food service industry and covers such topics as careers in food service, safety, sanitation, weights and measurements, knife skills, nutrition, breakfast cookery, soups, stocks, sauces, methods of cooking, cold food preparation, vegetable cookery, starch cookery, and basic baking methods. It also exposes students to an actual hands-on experience by having students working in the program's restaurant (The Teal Lantern) and by working on special functions throughout out the course of the year. In this way, students have the experience of working directly with the public.
Year Two
Culinary Arts II is a continuation of Culinary Arts I, building on the first-level skills while giving students additional experience and exposure to advanced techniques of basic technical skills. Many of these skills will be incorporated into the daily operations of The Teal Lantern and into the planning of special functions. Completion of the full Culinary Arts Program can lead to a rewarding career in the food service industry or can lead to further education in the culinary arts field or food service management field.
